Zucchini Parmesan

Tender slices of zucchini topped with crispy parmesan panko bread crumbs, doused with sauce and topped with mozzarella cheese. Served with a spring green and strawberry salad.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Pre heat oven to 425ºF. Wash and dry all produce. Trim the top and bottom of the leek, slice in half lengthwise, rinse again and slice into half moons. Remove rosemary from stem and finely chop. Mince garlic. Remove the top and bottom of the zucchini and thinly slice lengthwise (use a mandolin if you have one). Thinly slice the strawberries. Grate parmesan. Shred mozzarella

Step 2: MAKE THE SAUCE

In a medium sauce pot over medium heat add 1 Tbsp. of oil. Add the leeks and garlic. Sauté for 1-2 minutes then add the red wine, rosemary and tomato sauce while stirring. Reduce heat to low and cover. Simmer until ready to use.

Step 3: ASSEMBLE THE ZUCCHINI

Layer the zucchini into a medium sized baking dish or medium oven safe sauté pan. In a small bowl mix the panko with the grated parmesan and 2 Tbsp. of oil. Sprinkle this mixture over the zucchini.

Step 4: BAKE THE ZUCCHINI

Place the zucchini in the oven and bake for 20 minutes until panko is golden brown. Ladle tomato sauce over the zucchini and sprinkle with the mozzarella. Place back into the oven for 10 minutes. While the zucchini is in the oven start to make the salad, step #5.

Step 5: MAKE THE SALAD

Toss the spring greens with the sliced strawberries and drizzle with the dark cacao dressing.

Step 6: PLATE YOUR DISH

Divide the zucchini parmesan between two plates and serve the salad on the side. Enjoy!
