Antipasto (Grilled Vegetable) & Carrota Pita Sandwiches

Marinated grilled vegetable with carrota- a mediterranean carrot spread, tangy feta cheese in a warm grilled pita.

Vegetarian or not- this dish will blow your mind. The carrota is a carrot, olive oil, garlic, tumeric and spices spread made by a local favorite, caldo foods that brings flavor and health to your dinner table in no time. The spread is dairy free, gluten free, wheat free, sugar free, and chemical free yet full of flavor and goodness! The spread over a warm pita topped with antipasto or grilled marinated vegetables and feta cheese is our new favorite- go to sandwich to eat.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Remove ends from eggplant and discard; then, cut in half and slice into 1/4" slices. Remove ends from zucchini and discard; then, cut in half and into 1/4" slices. Remove ends and stem from bell pepper cutting into large pieces, about 2". Mince or grate garlic. Crumble feta cheese.

Step 2: MAKE MARINADE

Place 3/4 cup of oil, italian seasoning and a pinch of salt and pepper in a large bowl or zip top bag. Mix until incorporated.

Step 3: MARINATE VEGETABLES

Add eggplant, zucchini and bell pepper to marinade and mix to incorporate until well coated. Close zip top bag or cover large bowl with plastic wrap. Allow vegetables to marinate for 15 min at room temperature. While vegetables are marinating preheat grill to 350ºF (if using).

Step 4: GRILL VEGETABLES

Place vegetables on hot grill or sauté pan and grill for 1-2 min per side until charred and softened. Remove from grill and turn grill off. Set vegetables aside and allow to rest while you warm the pita (Step #5).

Step 5: GRILL PITA

Place pitas on grill to warm up, about 30 seconds per side.

Step 6: PLATE YOUR DISH

Divide pitas between two plates. Spread 1/4 of the carrota on each pita. Top with grilled vegetables and feta cheese. Enjoy!
