Step 1: MISE EN PLACE

Read through entire recipe before getting started. Remove root ends from green onions; discard ends, then thinly slice onions. Remove root from red onion; cut into quarters, cut each quarter in half. Mince or grate garlic. Peel ginger, then mince or grate. Cut broccoli into florets. Remove top sirloin steaks from package; rinse and pat dry. Cut each steak in half lengthwise, then cut into thin slices.

Step 2: MARINATE BEEF

Place steak, red onion, ginger, garlic, tamari, sugar and a pinch of salt and pepper in medium bowl. Toss using both hands until fully incorporated, cover and set aside. While beef marinates, begin to cook sushi rice (Step #3).

Step 3: COOK RICE

Add sushi rice and 1 ½ cups water to a medium pot and cover. Bring to a boil, reduce to a simmer; cook for 15-20 min until waters has been absorbed and rice is soft. While rice is cooking start searing the beef (Step #4).

Step 4: SEAR BEEF SKEWERS

Remove beef from marinade, reserve marinade. Skewer all beef, onions and broccoli alternating between each. Heat 1 Tbsp. oil in large sauté pan over medium heat. Sear skewers for 3-4 min per side until golden brown. Remove from pan.

Step 5: FINISH BEEF SKEWERS

Add marinade liquid to pan; simmer for 2-4 min until reduced and thickened. Return skewers to pan; toss in sauce to coat.

Step 6: PLATE YOUR DISH

Divide sushi rice between two bowls; top with skewers. Garnish with green onions and sesame seeds. Enjoy!
