Beef & Ramen Yakisoba Bowl

Tender sirloin stir-fry with fresh shiitake mushrooms, crisp green onions and fresh ramen noodles all coated with a garlicky gochujang & tamari sauce.

ABOUT THE DISH

Stir-fry is a technique you’ll use again and again; cooking quickly over high heat is any chef’s go-to for easy, flavorful dishes that land on the table in short order. Here gochujang – a fermented chili paste – adds incredible, deep flavor and just a hint of heat. It’s a perfect accent to the fresh veggies and top sirloin.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Bring 4 cups salted water to a boil in a medium pot. Wash and dry all produce. Remove root from green onions, bias slice. Slice mushrooms, about 1/8” thick. Mince ginger. Mince garlic. Remove steak from package; rinse and pat dry. Cut into 1/8” slices.

Step 2: COOK THE RAMEN

Cook ramen noodles according to package directions, about 2 min. Reserve ¾ cup pasta water, drain well, drizzle with a small amount of oil to keep from sticking together.

Step 3: SEAR THE STEAK

Season steak with a pinch of salt and pepper. Heat 1 Tbsp oil in large pan over medium heat. when hot, add steak and sear until lightly browned, about 2-3 min per side. Add garlic and ginger, sauté until browned about 1 min.

Step 4: MAKE THE SAUCE

Add hoisin, gochujang, tamari and reserved pasta water to the pan with the beef. Simmer for 2-3 min.

Step 5: FINISH THE STIR-FRY

Add drained ramen and shiitakes stir-fry constantly until incorporated, about 3-4 min. Add green onions and mix.

Step 6: PLATE YOUR DISH

Divide yakisoba between two bowls. Enjoy!
