Burst Tomato Bolognese

Warm burst heirloom tomato Bolognese with fresh rosemary, leeks and topped with shaved parmesan and fresh basil.

Spaghetti
Basil
Cherry Tomatoes
Rosemary
Garlic
Leeks
Grass fed ground beef

Cooking terms for this recipe

Chiffonade To finely slice vegetables or herbs. Best done by stacking the leaves and rolling, then slicing.
Sauté “To jump”. To fry in a small amount of fat at high heat.
Simmer To stew gently below or just at boiling point.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Bring 6 cups water, with a pinch of salt, to a boil in a medium pot. Wash and dry all produce. Chiffonade basil. Remove root from leek and discard; then, thinly slice. Mince or grate garlic. Cut cherry tomatoes in half. Remove rosemary leaves from stem and rough chop. Remove ground beef from package and pat dry.

Step 2: COOK PASTA

Add spaghetti to boiling water; cook at a rolling boil for 10-12 min until pasta is al dente. Reserve 2 cups pasta water, then drain well and set aside. While pasta is cooking, begin sautéing the aromatics (Step #3).

Step 3: SAUTÉ AROMATICS

Heat 1 Tbsp. oil in medium pan over medium heat. Add leeks and sauté 2-3 min until softened; then, add garlic and sauté another 1-2 min. Add cherry tomatoes, tomato paste and a pinch of salt and pepper. Cook until tomatoes burst and tomato paste caramelizes. Remove from pan and set aside.

Step 4: COOK BEEF

Add 1 Tbsp. oil to previously used pan over medium heat. Heat 1 Tbsp. oil in a medium sauté pan over medium heat. Add ground beef and a pinch of salt and pepper. Cook -breaking apart with a spoon or spatula - until done, about 5-8 min. USDA recommends cooking beef to an internal temperature 145ºF.

Step 5: FINISH PASTA

Add tomato base to ground beef and stir to incorporate. Add 2 cups pasta water and stir. Cook simmering 4-6 min until incorporated. Add spaghetti to pan and simmer another 4-6 min.

Step 6: PLATE YOUR DISH

Top Bolognese with parmesan cheese and fresh basil. Divide pasta between two bowls. Enjoy!
