Crockpot Chicken & Wild Rice Soup

Creamy chicken and wild rice crockpot soup with carrots, celery, seasonings and pulled chicken.
Difficulty: Easy
Time: 4-6 hrs crockpot time

Garlic
Carrot
Celery
Onion
Vegetable Broth Base
Wild rice
Chicken breast
Half & Half

Roux A cooked mixture of flour and fat used as a thickening agent.
Simmer To stew gently below or just at boiling point.
Mince To cut a food into very small pieces.

Crockpot or instapot, small pan, medium bowl

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Remove bottom inch from celery sticks and discard; then, cut into 1/2" pieces. Peel carrots and discard peel; then, cut into 1/2" rounds. Peel onion and discard peel; then, dice. Mince or grate garlic. Dissolve vegetable broth base in 3 cups warm water. Remove chicken breasts from package; rise and pat dry.

Step 2: FILL CROCKPOT

Place wild rice, celery, carrots, garlic, onion, and vegetable broth in 4 qt or larger crockpot. Set on low heat for 6-7 hours or high heat for 4 hours. That’s is for today!

Step 3: PULL CHICKEN

Once the soup is ready and before serving remove the large pieces of chicken breast from soup and place in a small bowl. Shred using two forks pulling in opposite directions until shreds have formed.

Step 4: MAKE ROUX

Melt butter in a small pan, add flour and stir until incorporated to make a roux. Cook over medium heat until begginig to form a thick browned paste. Add half and half and whisk constantly simmering until incorporated and beggining to thicken, about 3-4 min.

Step 5: FINISH SOUP

Retun shredded chicken to pot, add thick half & half and mix until incorporatred.

Step 6: PLATE YOUR DISH

Divide soup between two bowls, serve warm. Enjoy!
