Dirty Rice with Fig & Leeks

ABOUT THE DISH

Dirty rice is a traditional Creole and Cajun dish that gets its colorful name from all of the bits and flavors that are sautéed in. We’re adding layers of flavor with fig paste and lots of fresh veggies and herbs to amp up the grass-fed ground beef in this quick-to-the-table dish.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Remove the root from leek; discard, then cut leek in half lengthwise. Wash and dry again to remove any grit; bias slice into thin half-moons. Mince or grate garlic. Mince parsley leaves and stems. Remove seeds and stem from red bell pepper and dice. Mix vegetable broth base with 1 cup warm water.

Step 2: COOK THE RICE

Add basmati rice to a small pot with vegetable broth. Bring to a boil, then cover and reduce to simmer. Cook rice for 15-20 min until soft. While rice is cooking, start cooking the beef (Step #3).

Step 3: BROWN THE BEEF

In a large sauté pan over medium heat, add 1 tsp. of oil. When hot, add ground beef and brown for about 6-8 min, breaking up the meat as it cooks. When beef has browned, remove from pan using a slotted spoon and set aside in a bowl or on a plate. Reserve 2 Tbsp. of the rendered fat in the pan, and discard the rest. USDA recommends that ground beef is cooked to an internal temperature of 165ºF

Step 4: SAUTE THE VEGETABLES

In the same pan you used to brown the beef, add the leek, garlic, and red bell pepper. Sauté for 5-6 minutes, allowing the vegetables to slightly caramelize. Add the beef back to the pan along with dirty rice spice blend and fig paste. Mix well to combine.

Step 5: FINISH THE DIRTY RICE

Add rice, parsley, ground beef, and butter to the vegetables; mix well to combine.

Step 6: PLATE YOUR DISH

Divide rice between 2 bowls. Enjoy!
