Dirty Rice with Fig & Leeks

A sweet, savory and spicy blend of grass-fed ground beef, figs, leeks and spices mixed with basmati rice.

Dirty rice is a traditional Creole and Cajun dish that gets its colorful name from all of the bits and flavors that are sautéed in. We add layers of flavor with fig paste and a lot of fresh veggies and herbs to amp up the grass-fed ground beef in this quick-to-the-table dish.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Remove the root from leek; discard, then cut leek in half lengthwise. Wash and dry again to remove any grit; bias slice into thin half-moons. Mince or grate garlic. Mince parsley leaves and stems. Remove seeds and stem from red bell pepper and dice. Mix vegetable broth base with 1 cup warm water.

Step 2: COOK THE RICE

Add basmati rice to a small pot with vegetable broth. Bring to a boil, then cover and reduce to simmer. Cook rice for 15-20 min until soft. While rice is cooking, start cooking the beef (Step #3).

Step 3: BROWN THE BEEF

In a large sauté pan over medium heat, add 1 tsp. of oil. When hot, add ground beef and brown for about 6-8 min, breaking up the meat as it cooks. When beef has browned, remove from pan using a slotted spoon and set aside in a bowl or on a plate. Reserve 2 Tbsp. of the rendered fat in the pan, and discard the rest. Note: The USDA recommends that ground beef is cooked to an internal temperature of 165ºF

Step 4: SAUTE THE VEGETABLES

In the same pan you used to brown the beef, add the leek, garlic, and red bell pepper. Sauté for 5-6 minutes, allowing the vegetables to slightly caramelize. Add the beef back to the pan along with dirty rice spice blend and fig paste. Mix well to combine.

Step 5: FINISH THE DIRTY RICE

Add rice, parsley, ground beef, and butter to the vegetables; mix well to combine.

Step 6: PLATE YOUR DISH

Divide rice between two bowls. Enjoy!
