Gorgonzola is a type of Italian blue cheese. It has a protected designation of origin and can only be called by this name if it is made in Gorgonzola, near Milan, Italy.

Grass-fed sirloin
Gorgonzola
Carrot
Thyme
Parsley
Shallot

Step 1: MISE EN PLACE

Read through entire recipe before beginning. Rinse and dry all produce. Peel carrots and cut in half widthwise, then cut in half lengthwise. Peel and julienne onion. Peel shallot and julienne. Remove parsley leaves from stem and chop. Remove thyme leaves from stem and chop. Remove steak from the package, rinse, and pat dry. Leave butter out at room temperature to soften. Pre-heat oven broiler to high.

Step 2: ROAST CARROTS AND ONIONS

Toss carrots, onion and shallots in a pinch of salt and pepper and drizzle of olive oil and spread evenly onto a lined sheet pan. Place in oven and roast for 30 minutes, flippig halfway through the cook time.

Step 3: TOAST PECANS

In large oven safe saute pan over medium heat add half of the butter and brown sugar until melted and well combined. Add the pecans and mix together until well coated and sticky, about 5-6 minutes. Remove from the pan and set aside. Wipe the pan clean.

Step 4: MAKE GORGONZOLA BUTTER

In a small mixing bowl, blend softened butter with gorgonzola, thyme and parsley. Use a fork to incorporate all ingredients together well. Keep at room temperature until ready to use

Step 5: COOK THE SIRLOIN

In an oven-safe saute pan, heat 1 Tbsp. oil on medium heat. Add sirloin to hot pan and sear for 2-3 minutes on one side. Flip sirloin. Top each with the gorgonzola butter and place under broiler for 2-3 minutes, until topping is beginning to melt. Remove and let rest for 5 minutes before serving or slicing.

Step 6: PLATE YOUR DISH

Place carrots & onions on a plate and top with toasted pecans. Either slice sirloin or leave whole and place onto plate. Enjoy!
