Honey Garlic Shrimp & Snap Peas with Soba Noodles

Sautéed shrimp and snap peas with carrots, green onion, garlic, sesame seeds and ginger in a sweet tamari sauce and soba noodles.

Soba, the Japanese name for buckwheat, is a thin noodle made from buckwheat flour. Despite its name, buckwheat is not wheat at all. The buckwheat plant is more closely related to sorrel and rhubarb. This makes soba noodles a great pasta choice.

Step 1: MISE EN PLACE

Read through the recipe before getting started. Rinse and dry all produce. Peel and julienne the carrot. Bias slice the snap peas. Remove the root from the green onions and bias slice into 1 inch pieces. Mince the garlic. Peel and grate the ginger. Remove the shrimp from the package, rinse and pat dry then remove the tails and discard.

Step 2: COOK THE SOBA NOODLES

Bring six cups of water to a boil (do not salt the water.) in a medium pot. Add the soba noodles to the boiling water and cook, uncovered for 6-8 minutes. Drain well and rinse the noodles under cold water then place the noodles in a medium bowl and cover with cold water. Set aside until ready to use.

Step 3: SAUTÉ THE VEGETABLES

In a medium sauté pan over medium heat add 1 Tbsp. of oil. When hot, add the carrots and snap peas and sauté for 2-3 minutes. Remove the vegetables from the pan and set aside until the shrimp are cooked.

Step 4: SAUTÉ THE SHRIMP

In the same sauté pan that you cooked the vegetables, add 1 Tbsp. of oil. While the oil is heating up, season the shrimp with a pinch of salt and pepper on both sides. Add to the pan and sear for 1-2 minutes. Flip and add the garlic and ginger and sauté for another minute. Add the sweet tamari sauce, snap peas and carrots back into the pan and simmer until the sauce thickens, about 1-2 minutes.

Note: The USDA recommends cooking seafood to an internal
temperature of 145ºF.

Step 5: FINISH THE NOODLES

Drain the noodles well, then add them to the sauté pan. Stir the noodles to mix with vegetables and warm through. Remove from heat, add the green onions and sesame seeds to the pan and mix well to combine all ingredients.

Step 6: PLATE YOUR DISH

Divide the shrimp and noodles between two bowls. Enjoy!
