Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Bring 6 cups of salted water to a boil. Peel and finely dice the onion. Peel and dice the carrot. Remove rosemary leaves from stems and chop. Mince the garlic.

Step 2: COOK THE PASTA

Add the spaghetti to the boiling water and stir to keep from sticking. Cook for 8-10 minutes until the pasta is al dente. Drain well and place back into the pot with 1 tsp. of oil to keep from sticking. While the pasta is cooking move on to brown the sausage, step #3.

Step 3: BROWN THE SAUSAGE

In a large sauté pan over medium heat add 1 tsp. of oil. Add the Italian sausage, breaking up with a wooden spoon as it browns, about 5-6 minutes. Use a slotted spoon to remove the sausage from the pan and set aside.

Step 4: SAUTÉ VEGETABLES

In the same sauté pan that you browned the sausage in, over medium heat, add the carrot and onion and sauté until soft and slightly caramelized, about 4-5 minutes. Add the garlic and sauté another minute until the garlic is soft and fragrant.

Step 5: FINISH THE BOLOGNESE

Add the sausage, tomato sauce, rosemary, and half & half to the sautéed vegetables. Simmer on low for 6-8 minutes to develop the flavors and reduce into a thick, rich sauce.

Step 6: PLATE YOUR DISH

Divide the pasta between two bowls spoon the bolognese over the pasta then garnish with Parmesan cheese. Enjoy!
