Italian Sausage, Rainbow Chard and Barley Skillet with Crispy Panko & Parmesan Cheese

Mild italian sausage with sauteéd rainbow chard, warm barley, crispy herbed panko, shaved parmesan cheese and bright lemony notes.

ABOUT THE DISH

Skillets are meals that cook quick, and with minimal clean up! This comfort food dish is laced with springy rainbow chard and lemon, along with a crunchy counterpoint of toasted panko on top. Lots of layers of texture, flavor, and nutritional deliciousness.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Wash and dry all produce. Mince or grate garlic. Peel shallot; discard peel, cut in half then thinly slice. Remove bottom inch from rainbow chard; discard, then slice into 1" pieces. Remove parsley leaves from stem; discard stems, then mince. Cut lemon in half and set aside. Remove italian sausage from package.

Step 2: COOK BARLEY

Place barley, 1 ¼ cups water, and a pinch of salt and pepper in medium pot over medium heat. Bring to boil, cover and reduce heat to low. Cook 20-25 min until tender. Fluff with fork. While barley is cooking begin cooking the sausage (Step #3).

Step 3: COOK SAUSAGE

Heat 1 tsp. oil in medium sauté pan over medium heat; add sausage and cook breaking apart with a spoon for 10-12 min until fully cooked. Remove from pan using a slotted spoon and set aside. USDA recommends cooking pork to an internal temperature 145ºF.

Step 4: COOK VEGGIES

Add shallot, garlic and rainbow chard to previously used pan over medium heat; sauté 3-5 min until rainbow chard has broken down and shallot is caramelized. Remove from pan and set aside.

Step 5: TOAST PANKO

Heat 1 tsp. oil in previously used pan; add panko and half parsley. Cook stirring ocassionaly until toasted and crunchy, about 3-4 min. Remove from pan and set aside. Return sausage and veggies to pan; add barley and cook stirring ocassionally until combined and warm, about 4-5 min. Top with parmesan, remaining parsley and toasted panko.

Step 6: PLATE YOUR DISH

Divide skillet between two bowls and serve with a squeeze of lemon. Enjoy!
