Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Bring 6 cups water, with a pinch of salt, to a boil in a medium pot. Wash and dry all produce. Mince or grate garlic. Remove mandarin oranges from package; rinse and pat dry.

Step 2: COOK PASTA

Add farfalle to boiling water; cook at a rolling boil for 10-12 min until pasta is al dente. Strain pasta and place under running cold water until cooled. While pasta is cooking, begin making the dressing (Step #3).

Step 3: MAKE DRESSING

Place sweet tamari sauce, rice vinegar, 2 tsp. oil, garlic and a pinch of salt and pepper in the bottom of a medium bowl. Whisk until well incorporated.

Step 4: TOAST PINE NUTS

Place pine nuts in small sauté pan over medium heat. Cook stirring occasionally until toasted. Remove from pan and allow to cool.

Step 5: MAKE SALAD

Add farfalle, mandarin oranges, cranberries, pine nuts and spinach to bowl with dressing. Toss well. Let stand 5 min to allow flavors to develop.

Step 6: PLATE YOUR DISH

Divide pasta salad between two plates. Enjoy!
