Mediterranean Freekeh Salad with Crispy Chickpeas, Feta and Dill

Hearty freekeh tossed with crispy, lemony chickpeas, garlicky string beans, fresh dill and feta cheese.

String beans
Dill

Step 1: COOK THE FREEKEH

Read through entire recipe before getting started. Combine 2 ½ cups of water and freekeh in a medium pot. Cover, bring to a boil, reduce to a simmer and cook for 25-30 min until water has been absorbed and freekeh is soft. While freekeh is cooking move on to mise en place.

Step 2: MISE EN PLACE

Remove chickpeas from can, rinse and drain. Trim stems from string beans and chop into ½” pieces. Rough chop dill stems and fronds. Mince or grate garlic. Zest lemon, cut in half and juice.

Step 3: TOAST THE CHICKPEAS

Dry chickpeas with a paper towel. Heat 1 Tbsp. oil in a large sauté pan over medium heat. Add chickpeas and cook for 8-10 min until crisp. Remove from pan, season with a pinch of salt and pepper and toss with lemon zest.

Step 4: SAUTE GARLIC & BEANS

In the same large sauté pan heat 1 Tbsp. oil over medium heat. Add string beans and sauté for 6-8 min until lightly charred. Add garlic and sriracha seeds, mix well and remove from heat.

Step 5: FINISH SALAD

Add freekeh to the string beans, garlic, and sriracha seeds. Add 1 Tbsp. lemon juice and toss to combine.

Step 6: PLATE YOUR DISH

Divide freekeh between 2 bowls; top with crispy chickpeas, chopped dill and feta cheese. Season with a pinch of salt and pepper to taste. Enjoy!
