Pork Chops with Wild Rice, Broccoli, and Caramelized Onions

Wild Rice is a north american staple and formerly a Chinese staple that grows in shallow ponds. Wild rice is also known as Indian rice, Canadian rice and wild oats. While canoing in the BWCA a few years back I got the opportunity to paddle through pond after pond of growing wild rice…. for a chef, It was very cool.

Step 1: COOK THE RICE

In a small pot add the wild rice and 1 1/4 cup of water. Bring to a boil, reduce to a constant simmer, cover and cook for 45 minutes. Remove from the heat and keep covered. Water should be mostly absorbed. While the rice is cooking start your mine en place, step #2.

Step 2: MISE EN PLACE

Read through the entire recipe before getting started. Wash and dry all produce. Cut the broccoli into small florets. Peel and julienne the onion. Remove rosemary leaves from the stem and chop. Remove the parsley leaves from stem and chop. Slice the shiitake mushrooms. Mince the garlic. Grate the havarti cheese.

Step 3: SEAR THE PORK

In a large sauté pan over medium heat add 1 tsp. of oil. Season the pork chops with a pinch of salt and pepper on each side. Add to the hot pan and sear on each side for 4-5 minutes, until a nice golden crust has formed. Remove from pan and set aside to rest.

Step 4: SAUTE THE VEGETABLES

In the same pan that you sear the pork chops in, over medium heat, add 1 Tbsp. of oil. Add in the shiitake mushrooms, broccoli and yellow onion and sauté for 6-8 minutes until soft starting to caramelize. Add in the garlic and sauté for 1 more minute. Reduce heat to low, slide the veggies to one side of the pan and add the pork chops back in to stay warm.

Step 5: FINISH THE RICE

Add the butter, havarti, roasted tomatoes, rosemary and parsley to the wild rice. Mix well to combine.

Step 6: PLATE YOUR DISH

Divide the wild rice between each plate then top with the pork chop, whole or sliced. Add the veggies on the side. Enjoy!
