Quinoa, Black Bean and Sweet Potato Buddha Bowls with Green Sauce

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Peel sweet potato, then dice into ¼" cubes. Tear cilantro leaves and stems. Peel, then dice shallot. Mince or grate garlic. Cut lime in half and juice. Remove black beans from can and drain excess liquid.

Step 2: ROAST SWEET POTATOES

Spread sweet potatoes around with 1 Tbsp. oil, and a pinch of salt and pepper on a foil-lined baking sheet. Roast 20 min. While sweet potatoes are baking, begin cooking the quinoa (Step #3).

Step 3: COOK QUINOA

Place quinoa, 1 ¼ cups water and a pinch of salt and pepper in medium pot over medium heat. Bring to boil; cover and reduce heat to low. Cook 15-20 min until tender. Fluff with fork. While quinoa is cooking, begin making the green sauce (Step #4).

Step 4: MAKE GREEN SAUCE

Place cilantro, shallot, garlic, 2 Tbsp. lime juice, 3 Tbsp. oil and a pinch of salt and pepper in blender or food processor. Pulse until incorporated.

Note: If food processor or blender is unavailable simply mince shallot, garlic and cilantro and place in a small bowl. Add 2 Tbsp. lime juice, 3 Tbsp. oil and a pinch of salt and pepper. Stir to incorporate and allow to sit for 5 min.

Step 5: COOK BEANS

Heat 1 Tbsp. oil in medium sauté pan over medium heat. Add shallot and sauté 1-2 min until soft. Add black beans, ¼ cup water and a pinch of salt and pepper. Bring to a simmer and cook stirring occasionally until beans have warmed and liquid has reduced by half. Remove from heat.

Step 6: PLATE YOUR DISH

Divide quinoa between two bowls. Top with black beans, and sweet potatoes. Drizzle generously with green sauce. Enjoy!
