Rösti with Butter Roasted Cauliflower and Harissa Yogurt Sauce

A classic Swiss dish, rösti is a versatile base for all kinds of meals – any time of the day. Harissa, a North African chili pepper paste, adds zing to the sauce dressing our roasted, nutty cauliflower. International magic!

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Preheat oven to 400ºF. Wash and dry all produce. Cut cauliflower into large florets, as needed. Peel and dice carrot into ¼”pieces. Remove root from green onion; bias slice. Remove rosemary leaves from stem; mince. Slice potatoes into 1/4” thick rounds (Use a mandolin if available). Stack rounds into manageable piles and julienne. This might take longer than grating but it keeps potatoes from getting gummy.

Step 2: COOK POTATOES

Melt 4 pats butter in a large oven-safe sauté pan over medium-high heat. Add potatoes, carrots, and garlic; stir frequently until potatoes start to brown, 2-3 min. Place potatoes in oven and bake for 35 min.

Step 3: ROAST CAULIFLOWER

Melt remaining butter in a small measuring cup or bowl. Place cauliflower on a foil-lined baking sheet and drizzle with melted butter and 1 Tbsp. oil and a pinch of salt and pepper, mix well. Place in oven and roast for 25-30 min, turning over halfway through.

Step 4: MAKE SAUCE

Combine yogurt and harissa in a small bowl. Mix to combine.

Step 5: FINISH CAULIFLOWER

Toss roasted cauliflower with yogurt sauce and green onions, season with a pinch of salt and pepper to taste.

Step 6: PLATE YOUR DISH

Divide rösti between two bowls or plates, top with cauliflower and garnish with green onion. Or serve family style. Enjoy!
