Savory Oats with Pancetta and Goat Cheese

Savory oats with herbs, vegetables, and crispy pancetta topped with creamy goat cheese. 

ABOUT THE DISH

Oats the way we are use to them, are traditionally cooked for breakfast. Often paired with fresh fruit, honey, and fresh cream.  Oats are a great source of fiber which helps us feel full and stay full longer than sugary breakfast cereals.  In this dish we decided to do a complete 180 and prepare the oats for dinner with savory vegetables and crispy pancetta from Red Table Meat Co.

Goat Cheese is used to crumble over the top of the oats before serving. Goat cheese is thought to be one of the very first dairy products ever produced. Although in the west we have popularized cow’s milk the rest of the world predominantly consumes goats milk and goat cheese products.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Rinse and dry all produce. Remove stems from shiitake mushrooms and slice. Remove thyme leaves from stem and chop. Remove the root from the green onions and bias slice. Remove stem and seeds from the red pepper and dice. Mince the garlic. Mix the vegetable broth base with 4 cups of warm water, stir to dissolve. Remove the thick skin layer from the pancetta then dice.

Step 2: SEAR THE PANCETTA

In a large sauté pan over medium heat add 1 tsp of oil. When hot add the pancetta and sear until browned and crispy, 4-5 minutes. Remove pancetta from the pan with a slotted spoon and discard the rendered grease, saving 1 Tbsp.

Step 3: SAUTE THE VEGETABLES

In the same large sauté pan over medium heat, add the reserved rendered fat. When hot add the shiitake mushrooms and sauté for 3-4 minutes. Add in the red pepper, and garlic and sauté for an additional 2 minutes.

Step 4: MAKE THE OATS

Add the oats to the vegetables and mix to incorporate. Add in the vegetable broth and bring to a simmer. Cook for 8-10 minutes, stirring occasionally.

Step 5: FINISH THE OATS

When the broth has been mostly absorbed add in the green onions, thyme and the pancetta.

Step 6: PLATE YOUR DISH

Dived the savory oats between two bowls and top with goat cheese. Enjoy!
