Seared Salmon Sofrito with Jasmine-Lime Rice and Roasted Sunflower Seeds

Step 1: COOK THE RICE

Read through the entire recipe before getting started. Add 1 Tbsp. oil to small pot over medium-high heat. Add rice; cook for 1 min. Add 1 ¼ cup water and stir. Bring to boil; cover and reduce heat to low. Cook for 20 min. Once done, fluff with fork. While rice is cooking; move on to mise en place (Step #2).

Step 2: MISE EN PLACE

Wash and dry all produce. Peel carrot; small dice. Small dice bell pepper. Small dice celery. Mince jalapeño. Zest lime; cut in half and juice. Mince shallot. Mince garlic.

Step 3: MAKE SOFRITO

Heat 3 Tbsp. oil in medium pan. Add carrot, bell pepper, celery, shallot and jalapeño. Season with salt and pepper. Cook for 2-3 min. Add sofrito sauce and cook, simmering until soft and fragrant, but not browned; about 3-4 min. Remove sofrito from pan and set aside in a small bowl. Wipe pan clean with paper towel.

Step 4: SEAR THE SALMON

Heat 2 Tbsp. oil in pan used for sofrito, still over medium heat. Season salmon with salt and pepper. Add salmon; sear until caramelized, about 2 min. Flip and sear other side, about 2 min. Remove pan from heat and drizzle salmon with lime juice.

Step 5: FINISH THE RICE

Add lime zest and sunflower seeds to cooked rice. Season with a pinch of salt and pepper to taste. Toss until incorporated.

Step 6: PLATE YOUR DISH

Divide rice between two bowls. Top with seared salmon then spoon sofrito over salmon. Enjoy!
