Seared Steak with Garlic Butter Mushrooms & Kale

Seared top sirloin steak served with roasted cremini and shiitake mushrooms tossed with a rosemary garlic-butter and kale.

Another simple meal made fabulous by high-quality, flavorful ingredients and just a few little tricks. Roasting mushrooms brings out deep umami and perfect texture, and then we toss these with fresh baby kale, garlic butter, and toasted panko for a bit of crunch.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Preheat oven to 400ºF. Wash and dry all produce. Remove stems from shiitake mushrooms; discard and keep caps whole. Slice cremini mushrooms in half. Remove rosemary leaves from stems; discard stem and mince leaves. Mince or grate garlic. Remove top sirloin from package; rinse and pat dry.

Step 2: ROAST MUSHROOMS

Place mushrooms on a foil-lined baking sheet. Drizzle with 1 Tbsp. oil and spread around to coat mushrooms. Place in oven and roast for 25 min. While mushrooms are roasting, start making garlic butter (Step #3).

Step 3: MAKE GARLIC BUTTER

Melt butter in a small sauté pan over medium heat. Add garlic and rosemary; cook for 2-3 min. Pour butter into a small bowl and set aside. Don’t wipe the pan clean!
Using the same pan, add panko and toast over medium heat, for 3-4 min until panko starts to brown and is golden brown. Turn off heat, remove panko from pan and set aside in medium mixing bowl.

Step 4: SEAR THE STEAK

Heat 1 tsp. oil in a medium sauté pan over medium heat. Season steaks with a pinch of salt and pepper. Add to hot pan and sear on each side for 3-4 min for medium. Place on cutting board and allow to rest until your ready to plate (See meat temperature guide).
The USDA recommends cooking beef to an internal temperature of 145ºF.

Step 5: TOSS MUSHROOMS & BUTTER

Add kale and mushrooms to panko in the medium mixing bowl; toss with warm garlic butter and season with a pinch of salt and pepper.

Step 6: PLATE YOUR DISH

Divide kale and mushrooms between two plates. Place steak next to vegetables. Enjoy!
