Sen Yai Sen Lek Chicken Satay with Peanut Sauce & Cucumber Salad

Marinated, curried chicken satays smothered with seasoned peanut sauce and served with fresh cucumber relish salad and warm local bread just as you would find them in the streets of Thailand!

Sen Yai Sen Lek is a local Thai restaurant in NE Minneapolis where Chef Joe, serves us his favorite Thai street food! For this recipe, he has shared with us one of the favorites at his restaurant, curried chicken skewers! Feel free to eat these as either an appetizer and finger food kind-a-night, or as a plated dinner for two. These curried chicken skewers will take your Thai cooking to a whole new level!

Joe’s Thai culinary experience was initiated in his family's kitchens in Bangkok and later in Chicago. He learned traditional techniques and careful balancing of flavors by observing and participating in the preparation of family meals. In September 2008, he and his wife Holly opened Sen Yai, Sen Lek, their critically acclaimed Thai restaurant in North Minneapolis. Joe has also worked at the much beloved former Chet's Taverna and Nicollet Island Inn, where he developed his baking talents. In addition, Joe spent three summers preparing and selling artisan breads and pastries at the Northeast Minneapolis Farmers' Market on University Ave. Frejas Breads was a Sat. morning all-family commitment, fondly named for his two children (Freya & Jasper).

Marinate Is the process of soaking foods in a seasoned, often acidic, liquid before cooking.  It was derived from the brining process.
Simmer To stew gently below or just at boiling point.

Step 1: MAKE SKEWERS

Read though the entire recipe before getting started. Wash and dry all produce. Preheat grill or oven broiler to 400ºF. Remove chicken breasts from package; rinse and pat dry. Cut the chicken breast lengthwise into ½ inch thick slices. Combine 1/4 cup coconut milk (shake well before using), satay spice blend, fish sauce and a pinch of salt and pepper in a medium mixing bowl until incorporated. Add sliced chicken and mix thoroughly. Allow to marinate 5-10 minutes. Skewer chicken pieces lengthwise, flipping over from side to side forming a gentle acordeon to obtain a flat skewer shape.

Step 2: GRILL SKEWERS

Grill over medium­hot barbecue 4­5 minutes per side or until fully cooked. If not using a grill broil in the oven for approximately 3 minutes, remove & turn skewers, then broil an additional 2-3 minutes. Remove chicken from grill and set aside. While chicken is grilling begin making the peanut sauce (Step #3).

Step 3: MAKE CURRIED PEANUT SAUCE

Combine curry paste, peanut butter and remaining coconut milk in small pot over medium heat. Bring to a gentle boil and reduce heat to low. Add peanut sauce mix and a pinch of salt and pepper. Stir to incorporate and simmer 4-5 min to allow flavors to develop and sauce to thicken. Remove from heat.

Step 4: MAKE CUCUMBER RELISH

Peel cucumber and slice in half lengthwise, remove seeds and discard peel and seeds. Then cut into quarters and small dice. Tear cilantro leaves and stems. Peel shallot, discard peel then, thinly slice. Place cucumber, cilantro, shallot, relish blend and a pinch of salt and pepper in a medium mixing bowl. Mix until incorporated and allow 5 min to develop flavors. While cucumber marinates begin toasting the bread (Step #5).

Step 5: TOAST BREAD

Place bread on hot grill or oven. Cook until lightly toasted, about 2 min per side. Remove from heat. Cut each piece into fourths.

Step 6: PLATE YOUR DISH

Spoon a little peanut sauce to the bottom of each plate. Divide chicken skewers between two plates and top with cucumber relish. Serve with toast.
