Shrimp Scampi Foil Packets with Angel Hair Pasta

Grilled buttery-garlicky shrimp scampi foil packs served over tender angel hair pasta.

Foil packets are a fun way to cook, inside or out!  We’re taking some very familiar flavors and layering our shrimp scampi-style with garlic, parsley, butter, lemon and a little extra zing from red pepper flakes.  Everything goes on top of sliced zucchini in the packet so it takes on the wonderful layers of flavor, too.  This dish pairs perfectly with whites like pinot grigio or albariño, or even a dry rosé.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Preheat grill or oven to 400ºF. Bring 6 cups water, with a pinch of salt, to a boil in a medium pot. Wash and dry all produce. Mince or grate garlic. Remove parsley leaves from stem and discard; then, mince. Remove top and bottom from zucchini, cut into quarters; then, thinly slice. Zest lemon; cut in half, thinly slice half and juice the other half. Remove shrimp from package; rinse and pat dry.

Step 2: COOK PASTA

Add pasta to boiling water; cook at a rolling boil for 10-12 min until pasta is al dente. Drain well and set aside. While pasta is cooking, begin making the packets (Step #3).

Step 3: MAKE PACKETS

Cut 2 rectangles of aluminum foil about 16”x 12” in size. In a small bowl mix 4 Tbsp. oil, 1 Tbsp. lemon juice, 2 tsp. lemon zest, red pepper flakes, and a pinch of salt and pepper until incorporated. Place 1 cup zucchini pieces, half shrimp, quarter of the parsley, half garlic and a pinch of salt and pepper.

Step 4: FINISH PACKETS

Fold sides up creating a barrier. Drizzle half seasoned oil on each packet and top with butter pats breaking into smaller pieces. To close packets make both ends meet and begin to fold sides over each other to close. Forming a enclosed packet similar to a calzone or an empanada shape.

Step 5: GRILL PACKETS

Once closed, shake packets gently a couple of times. Place shrimp packets on hot grill or oven and cook 15-20 min moving around occasionally until done. Allow packets to rest 1-2 min; then open carefully.

Step 6: PLATE YOUR DISH

Divide pasta between two bowls. Place shrimp packet contents on top and garnish with remaining parsley. Enjoy! Note: Don’t forget to remove tails off shrimp before eating!
