Sirloin with Braised Potatoes and Brussels Sprouts

Grass fed sirloin seared medium rare served with sharp cheddar braised potatoes and brussels sprouts. 

ABOUT THE DISH

Yukon gold potatoes have a pale yellow/golden color skin and a similar color flesh. The skins from the yukon are much softer than a russet and are often left on verses peeling.  The flesh of the yukon is sweeter and has a smaller starch structure than a russet giving it a creamier mouth feel.  In this dish we are slicing then braising the potatoes with brussels sprouts and cheddar cheese.

Braise To fry or sear food lightly, then stew slowly while covered.
Sear To cook the surface of meat very quickly with intense heat.
Julienne To slice into thin strips about the size of matchsticks.

What you need

1 medium sauté pan

1 large oven safe sauté pan

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Pre heat the oven to 425ºf. Rinse and dry all produce. Remove thyme from stem and chop. Cut the base off the brussels sprout then slice in half and julienne. Peel and julienne the onion. Mince the garlic. Cut the potatoes in half lengthwise then thinly slice half moons. Mix the vegetable broth base with 1/2 cup of water. Grate the cheddar cheese.

Step 2: SAUTE THE VEGETABLES

In a large oven safe sauté pan on medium heat add the butter to melt. When hot add the brussels sprouts and onion. Sauté for 4-5 minutes until soft and fragrant. Add in the garlic and sauté an additional minute.

Step 3: COOK THE POTATOES

Add the potatoes to the oven safe sauté pan with the vegetables and mix to combine. Add the vegetable broth and the heavy cream. Bring to a simmer and cook for 10 minutes.

Step 4: FINISH THE POTATOES

Add half of the thyme and cheddar cheese and mix to combine. Place the oven safe pan into the oven and braise for …… minutes. When done add the remaining cheddar to the top and place back in the oven for an additional 10 minutes to brown the cheese. While the potatoes are in the oven for the last 10 minutes move to cook the sirloin (step #5).

Step 5: COOK THE SIRLOIN

In a medium sauté pan over medium heat add 1 tsp of oil. Season each side of the sirloin with a pinch of salt and pepper. When hot, add the sirloin to the pan and sear on each side for 3-4 minutes for medium rare, increase time for a more well done steak. When done remove from the pan and set on a cutting board or plate to rest until the potatoes are done.

Step 6: PLATE YOUR DISH

Divide the braised potatoes and onions between two plates. Serve the sirloin on the side whole or sliced. Enjoy!
