Tempeh Lo Mein

Golden brown seared tempeh with shiitake mushrooms, shiitake mushrooms and carrots tossed in a sweet and salty lo mein sauce.

ABOUT THE DISH

Some consider tempeh to be one of the worlds healthiest foods.  Tempeh is made by fermenting whole soybeans and pressing it into a cake. Tempeh is a good ground meat substitue due to the textural similarities.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Rinse and dry all produce. Remove shiitake stems and thinly slice. Remove root from scallions and bias slice. Mince garlic. Peel ginger and grate or mince (see instruction card). Peel and julienne carrot. Remove the tempeh from the package and crumble into a bowl. Bring 6 cups of salted water to a boil in a large pot.

Step 2: COOK THE NOODLES

Add the udon noodles to the boiling water and cook for 8-10 minutes. When done drain well and set aside. Drizzle with 1 tsp. of oil to prevent the noodles from sticking together. While the noodles are cooking move on to sauté the tempeh (step 3).

Step 3: SAUTE THE TEMPEH

In a wok or large sauté pan on medium high heat add 1 Tbsp. of oil. When the pan is hot add the tempeh and sauté for 4-5 minutes to crisp up. When done remove from the pan and set aside.

Step 4: SAUTE THE VEGETABLES

In the same pan you cooked the tempeh in, on medium high heat, add 2 Tbsp. of oil. When hot add the shiitake mushrooms and carrots and sauté for 3 minutes while stirring to promote even browning. Add in the garlic, ginger and scallions and sauté for an additional minute. Turn off the heat.

Step 5: FINISH THE LO MEIN

Add the tempeh back to the pan followed by the udon noodles. Add the lo mein sauce and toss to coat and warm.

Step 6: PLATE YOUR DISH

Divide the lo mein between 2 bowls. Enjoy!
