Teriyaki Beef and Shiitake Rice Bowl with Broccoli

Sweet and tangy ginger teriyaki beef cooked with shiitake mushrooms, broccoli florets and green onions served over sticky rice and garnished with sesame seeds and cilantro.

Teriyaki is a traditional Japanese technique – usually a glaze – that we’ve adapted into a quick, flavorful sauce. This is a fresh, hearty dish with bright flavors is perfect for summer!

Cilantro

Step 1: COOK THE RICE

Read through entire recipe before getting started. Combine sushi rice with 1 ½ cups water in a small pot with lid. Cover, bring to a boil, reduce to a simmer and cook for 20 min, until water has been absorbed. Remove from heat and keep covered. Fluff rice with fork before serving. While rice is cooking, move on to mise en place (Step #2).

Step 2: MISE EN PLACE

Wash and dry all produce. Remove cilantro leaves from stems; mince stems and set leaves aside. Mince or grate garlic. Peel ginger; mince or grate. Remove roots from green onions, then bias slice. Remove stems from shiitake mushrooms, slice. Cut broccoli into small florets. Remove ground beef from package; pat dry.

Step 3: MAKE THE SAUCE

Heat 1 Tbsp. oil in medium sauté pan over medium heat. When oil is hot, add garlic, ginger and cilantro stems. Cook, stirring until softened, about 1-2 min. Add sweet tamari sauce; mix until incorporated.

Step 4: COOK THE BEEF

Add ground beef to pan and cook over medium heat breaking apart with a wooden spoon. Cook until fully done, about 4-6 min. Season with a pinch of salt and pepper.

Step 5: COOK THE VEGETABLES

Add broccoli and shiitake mushrooms to pan. Cook stirring occasionally until softened, about 2-3 min.

Step 6: PLATE YOUR DISH

Divide rice between two bowls. Top with teriyaki beef and vegetables. Garnish with cilantro, green onions, and sesame seeds. Enjoy!
