Thai Chicken Noodle Bowls

Fresh vermicelli noodle bowls with sweet tamari chicken, carrots, cabbage, cilantro and drizzled with plenty of peanut sauce!

This bowl of noodles with peanut sauce takes our heart while keeping it fresh, healthy and easy. Vermicelli noodles are thin asian rice noodles that are usually served inside sping rolls, in stir-fry or soups. The noodles are natually gluten free and super versatile when it comes to cooking! We love vermicelli bowls as a healthy alternative to dinner!

Ingredients
Rice vermicelli noodles
Tamari-sugar base
Carrot
Purple cabbage
Cilantro
Lime
Chicken breast
Peanut Butter

Marinate Is the process of soaking foods in a seasoned, often acidic, liquid before cooking.  It was derived from the brining process.
Julienne To slice into thin strips about the size of matchsticks.
Sear To cook the surface of meat very quickly with intense heat.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Bring 6 cups water, with a pinch of salt, to a boil in a medium pot. Wash and dry all produce. Peel carrot and discard peel; then, julienne into ¼" matchsticks. Thinly slice red cabbage avoiding the hard inner core; discard core. Tear cilantro leaves and stems. Cut lime in half; juice half and cut other half into quarters.

Step 2: COOK NOODLES

Add vermicellii noodles to boiling water; cook at a rolling boil for 3-4 min until noodles are al dente. Drain well, rinse with cold running water to cool and set aside.

Step 3: MARINATE CHICKEN

Place chicken breasts, half tamari-sugar base and a pinch of salt and pepper in medium bowl. Toss around to coat chicken and allow 5-8 min to marinate. While chicken is marinating begin making the peanut sauce (Step #4).

Step 4: MAKE PEANUT SAUCE

Place peanut butter, 1 Tbsp. lime juice, remaining tamari-sugar base and a pinch of salt and pepper in a small bowl. Mix thoroughly until smooth and incorporated. Set aside.

Step 5: COOK CHICKEN

Heat 1 Tbsp. oil in medium sauté pan or grill over medium heat. Season chicken with a pinch of salt and pepper. Add to sauté pan or grill and sear over medium heat for 6-8 min per side until golden brown and fully cooked. Remove from heat and dice into 1/2" cubes.

Step 6: PLATE YOUR DISH

Divide vermicelli noodles between two bowls. Top with chicken, cabbage, carrots and cilantro in segments. Drizzle generously with peanut sauce. Enjoy!
