Thai Curry Salmon with Jasmine Rice

Tender salmon simmered in green curry coconut sauce with carrots, radishes, cilantro and finished with fresh squeezed lime juice.

This dish is literally what our dreams are made of. The combination of salmon, green curry sauce and coconut milk is simply a match made in heaven. This recipe is a perfect gluten free option, a perfect fish Friday before during lent or just ANY day this week.

Ingredients
Jasmine rice
Green curry paste
Coconut Milk
Cilantro
Lime
Ginger
Carrot
Radishes
Surrender salmon fillets

Medium, deep sauté pan

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Zest lime; cut in half and then juice. Tear cilantro leaves and stems. Peel ginger and discard peel; then, grate. Remove top and peel carrot and thinly slice. Remove top and bottom from radish and discard; then, thinly slice. Remove salmon from package; rinse and pat dry.

Step 2: COOK RICE

Place jasmine rice, 1¼ cups water and a pinch of salt and pepper in medium pot over medium heat. Bring to boil; cover and reduce heat to low. Cook 15-20 min until tender. Fluff with fork. While rice is cooking, begin searing the salmon (Step #3).

Step 3: SEAR SALMON

Heat 1 Tbsp. oil in medium sauté pan over medium heat. Season salmon with a pinch of salt and pepper. Make sure salmon skin is dry before placing in pan. Add salmon skin side down to pan for 4-5 min and remove from pan. Do not flip.

Step 4: MAKE SAUCE

Add ginger, carrots and green curry paste to previously used pan. Add coconut milk and a pinch of salt and pepper. Mix using a whisk to dissolve green curry paste.

Step 5: FINISH SALMON

Add salmon to sauce skin side down and baste using a spoon to cook the top. Cook 3-4 min simmering until salmon is cooked to desired doneness. Add 1 Tbsp. lime juice, radishes and cilantro on top.

Step 6: PLATE YOUR DISH

Divide rice between two plates. Top with salmon, vegetables and plenty of green curry sauce. Enjoy!
