Lentil Shepherd’s Pie

Soft creamy mashed potatoes over tender simmered BBQ lentils and veggies! We are in love with this meal!

Shepherd’s pie is close to everyone’s hearts. This lentil beauty has all the flavors and comfort present to make you feel cozy and warm from the inside-out. Simmering the lentils in Triple Crown BBQ sauce gives them a deep, umami flavor. So vegans, vegetarians, Meatless Monday aficionados or just about anyone will love this one.

Green lentils
Triple Crown BBQ Sauce
Shallot
Carrot
Russet potato
Garlic
Thyme

Mince To cut a food into very small pieces.
Simmer To stew gently below or just at boiling point.
Sauté “To jump”. To fry in a small amount of fat at high heat.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Dice potatoes into 1" cubes. Remove top from carrot and discard; then slice into 1/2" pieces. Remove tops and peel from shallot and discard; then, small dice. Mince or grate garlic. Remove thyme leaves from stem and discard stem.

Step 2: COOK POTATOES

Place potatoes in medium pot covered by 2” of water over medium heat; add a pinch of salt. Bring to a boil; cook for 10-12 min until potatoes are tender. Reserve 1 1/2 cups pasta water. Turn off heat, strain potatoes, and return to pan. While potatoes are cooking, begin sautéing the lentils (Step #3). Add potato water; mash using a potato masher or fork until incorporated. Season with salt and pepper.

Step 3: SAUTÉ LENTILS

Heat 1 Tbsp. oil in medium sauté pan over medium heat. Add lentils and sauté 3-4 min until lightly browned. Add garlic, shallot and carrots and sauté another 3-4 min until soft.

Step 4: SIMMER LENTILS

Add 3 cups water, Triple Crown BBQ sauce and a pinch of salt and pepper to lentils. Bring to a simmer and cook simmering 20-25 min until liquid has evaporated almost completely and lentils are soft but not mushy. Note: If you run out of liquid and the lentils are not soft yet simply add another 1/2 cup and continue to cook.

Step 5: FINISH SHEPHERD'S PIE

Top lentils with mashed potatoes to cover completely. Spread around evenly. If desired, make a pattern using a fork. Transfer to the oven and bake for 20 min until golden brown.

Step 6: PLATE YOUR DISH

Spoon shepherd's pie onto plates. Enjoy!
