Vegan Smokehouse Ribs with Citrus Splash Celery Salad and Pecans

Smokey vegan ribs from Herbivorus Butcher served with crisp celery salad, toasted pecans and crumbled vegan feta, all tossed with a citrus splash vinaigrette.

Step 1: ROAST THE RIBS

Read through entire recipe before getting started. Pre-heat oven to 425ºF. Lay out a sheet of foil. Place the vegan smokehouse ribs on foil, add 2 Tbsp. of water and wrap them up tight. Place them on a baking sheet into the pre-heated oven. Cook for 30 minutes.

Step 2: MISE EN PLACE

Wash and dry all produce. Rough chop the pecans. Remove root from spring onion and bias slice. Remove parsley from the stem and chop. Remove bottom inch from celery and discard. Slice celery stalks lengthwise into 3 or 4 strips then dice crosswise. Crumble vegan feta into small pieces. Quarter tomatoes.

Step 3: MAKE THE SALAD

Combine the celery, spring onions, parsley, feta, tomatoes and citrus splash vinaigrette to a medium mixing bowl and toss. Cover and refrigerate until ready to plate.

Step 4: TOAST THE PECANS

Toast pecans in a small sauté pan until they become fragrant, about 2 minutes. Remove from pan and add to the celery salad. Be careful not to have your heat to high or else pecans will burn.

Step 5: FINISH THE SALAD

Add the citrus splash vinaigrette and toasted pecans to the salad. Season with a pinch of salt and pepper.

Step 6: PLATE YOUR DISH

Divide the vegan celery salad to between two plate. Add the vegan ribs on the side. Enjoy!
