Vegan Stir-fry with Toasted Cashews, Fried Garlic & Rice Noodles

Sweet and salty stir-fry with tender rice noodles, mushrooms, bell peppers and green onions all seasoned with fried garlic and garnished with cashews.

Stir-fry Sauce
Cashews
Rice noodles
Green Onions
Shallot
Red Bell Pepper
Cremini mushrooms

Stir-Fry To fry something over high heat quickly (with little oil) while stirring constantly.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Cut cremini mushrooms into quarters. Remove root from green onion; bias slice. Remove root and core from bell pepper, slice into strips. Remove root and stem from shallot, peel, cut in half and then slice thinly. Rough chop cashews.

Step 2: COOK RICE NOODLES

Bring 6 cups water to a boil in medium pot. Add rice noodles and cook 4-6 minutes until done. Strain and set aside.

Step 3: TOAST CASHEWS

Heat medium sauté pan over medium heat. Add cashews and toast until lightly browned. Remove from pan and set aside.

Step 4: STIR-FRY VEGETABLES

Heat 1 Tbsp. oil in previously used pan over medium-high heat. Add shallots and cook 1-2 min until softened. Add bell pepper and mushrooms, stir-fry 2-3 min.

Step 5: FINISH STIR-FRY

Add stir-fry sauce, fried garlic and rice noodles; stir-fry 2-3 min until sauce coats vegetables. Add green onions and toss to incorporate.

Step 6: PLATE YOUR DISH

Divide stir-fry between two plates. Garnish with toasted cashews and enjoy!
